You chose: change colour leaving grain visible and maximum durability.
The best solution is to use a wood dye or stain followed by a hardwearing wood finish.
Dyes Vs Water Based Stains Vs Oil/Solvent/Spirit Based Stains
Wood dyes are similar to stains but they penetrate the wood rather than sitting on the surface, and are more translucent leaving the grain more visible in comparison with stains. They can also be thinned, or mixed with finishes like shellac or water based finishes to tint them in colour if required.
Water based stains contain pigments that sit inside the grain and pores of the wood changing the colour but leaving the wood grain visible. They clean up easily and are not too smelly but they can give a blotchy appearance on some wood types (particularly soft woods like pine), so application of a sanding sealer/pre treatment product may be required to reduce blotchiness.
Neither stains nor water based dyes add any durability to the wood, so a wood finish should be applied once they have cured.
Oil/solvent/spirit based wood stains take longer to cure but they do add some durability to the wood - so a top coat may or may not be necessary after application.
Once you have chosen a stain or dye, you can go here to choose a top coat.
Be aware that when you apply a top coat, some of the stain may lift during application unless you're applying it by spraying. It's always best to test combinations of stains and finishes on a scrap piece of the wood you're using. Please also note: there are many different types / formulas of stains, dyes and wood finishes and they won't always be compatible with one another and the above information is provided as an overview only - it's always advisable to test them out before applying to your project.
